Un platillo clásico, se reinventa a lo GÜD. La receta perfecta para cuando recibes visitas… o simplemente para disfrutar tú mismo.

Paso 1

Pon a hervir los tomates y los chiles. Pica en julianas las zanahorias y las calabazas. Saltéalas con un poco de aceite, sal y pimienta en un sartén.


Paso 2

Licúa los tomates, chiles, cebolla, ajo y el cilantro hasta que quede todo bien molido. Agrega sal y pimienta. Mientras sigues licuando, agrega la crema vegana GÜD poco a poco para darle una textura deliciosa.


Paso 3

Después de licuar todos los ingredientes, ponlos en una cacerola pequeña con un poco de aceite. Déjalo a fuego lento hasta hervir y luego retira. En un sartén pon un poco de aceite, sólo lo necesario para dorar ligeramente las tortillas y que no se rompan al doblarlas.


Paso 4

Después de dorar tu tortilla, ponle un poco (o mucho) de las verduras salteadas y dóblala. Repite este paso con la cantidad de enchiladas que vayas a comerte.

Montadas en un plato, baña las tortillas de tu deliciosa salsa y ponles tanto queso Mozzarella GÜD como quieras.


TIP ADICIONAL:

Mete tus enchiladas al horno de microondas un par de minutos para que queden gratinadas. Disfruta.
